Quinoa Rice With Chicken

Quinoa rice is my preferred for lunch, aside from it is really wholesome, it also fills me up incredibly excellent so I do not crave for doughnuts in the afternoon any longer. 1 of my favourite recipes is the grilled lemon grass chicken with quinoa and vegetables. To make this you want:

¾ cup quinoa
A single ½ cups chicken stock
three medium-sized shallots (chopped)
two stalks fresh lemon grass
One ginger (peeled)
¼ cup fresh lime juice
A single tablespoon soy sauce
two tablespoons brown sugar
One ½ teaspoons salt
One teaspoon ground black pepper
One teaspoon ground coriander
four boneless chicken breasts (eliminate the skin)
One particular pound peas
One red bell pepper (seeded and thinly sliced)

Puree shallots, lemongrass, ginger, ¼ cup oil, lime juice, soy sauce, sugar, salt, pepper and coriander. Use this mixture to marinade the chicken for two hours. Heat two teaspoons of oil in a saucepan and cook quinoa rice till toasted (three to five minutes) then add the chicken broth, bring to a boil. Lower heat to medium-low and simmer till liquid is absorbed (about 20 minutes or so). Turn off the heat and cover till you are prepared to serve it.

Grill the chicken breasts and wait for them to cook. Set the chicken aside. Cook peas and bell peppers in a separate skillet over medium-higher heat. Season with salt and pepper. Top rated the quinoa rice with grilled chicken and then add the vegetables. This will make four servings.
